Next, our aguamiel makes its pilgrimage to the sacred halls (well, clean-room garage) of master pulquero George Ugalde. George travels the country teaching about pulque and curado — but his heart and fermentation tanks remain at home - where he converted much of his home to a Pulque Palace. With precision and doting passion, he crafts pulque and curados that are rich, frothy, and utterly perfect.
