Pulque 101:
meet the masterpiece nearly lost

Pulque’s an ancient Mexican drink made by fermenting the aguamiel, (literally “honey water”), of the maguey plant, which is also the source of tequila and mezcal. Unlike its distilled cousins however, pulque’s alcohol is far more moderate, generally around 4%. Naturally tart and slightly viscous, it’s like nothing you’ve ever tried. 

Curado is its flavored counterpart – pulque blended with fruits, nuts, spices, and/or herbs to accentuate or add sweetness, sourness, nuttiness, or even savory notes. The depth and breadth of curado flavors is thus unlimited. So you’d best get started!
